Course Summary: This unit deals with the skills & knowledge requirements "to extract and serve espresso coffee using commercial espresso machine, including storage of coffee and cleaning, and care and preventative maintenance of machinery."
Assessment & completion standard: Verbal & practical demonstration of acquired skills & knowledge. Upon the successful completion of this course particpants receive the Statement of Attainment SITHFAB012A Prepare and serve espresso coffee as part of a Certificate II in Tourism, Hospitality and Events SIT07
Duration: 6.5 hours. Saturday to Wednesday from 9.45am to 5pm. Thursdays & Fridays 8.45am to 3.30pm & additional classes 6.45pm to 10pm.
Location: Suite 5, 250 Pitt Street, Sydney
Summary of outcomes: Successful completion of the course means you will demonstrate achievement in the following areas.
- Organise & prepare work areas
- Provide customer service & advise customers on espresso coffee
- Select & grind coffee
- Extract coffee
- Texture milk
- Serve & present espresso coffee
- Clean & maintain espresso machine
Particular attention will be given to the hygiene & food safety practices related to making, serving & storing coffee, coffee products & service equipment. In addition to the core elements covered in this unit participants will also learn:
- Free pour technique
- Advanced presentation styles
- Understanding of layering
